Beetroot and Quinoa Salad

You need:

  • 200 g of cooked quinoa
  • 100 g boiled/baked/pickled beetroot
  • 150 g of cucumber
  • 100 g of tomato
  • a bunch of parsley
  • a bunch of dill
  • 2 tablespoons of olive oil
  • salt
  • pepper
  • 2 tablespoons of lemon juice


If you have uncooked quinoa, you should know that it must be rinsed in 4-5 water before it is boiled.

For half a cup of quinoa, you need about a cup of water. Let it boil for 10-12 minutes.

For this salad all you have to do is dice the cucumber and beetroot and chop the greens.

Then assemble the salad, season with salt and pepper, add the olive oil and lemon juice and mix.
