We end the Christmas edition of 2022 with this extremely delicious recipe: Christmas Log.

A fluffy cocoa cake, combined with a delicious whipped cream and all wrapped in a butter and cocoa cream.

A wonder that will look great on your holiday table!

You need:

For the top:

  • 7 eggs
  • 80 g of flour
  • 200 g of sugar
  • 3 tablespoons of oil (30 ml)
  • 30 g of sugar
  • a pinch of salt

 

For the filling:

  • 300 ml of liquid whipped cream
  • 1/4 cup powdered sugar
  • a spoonful of vanilla essence

 

For the cream:

  • 284 g of butter
  • 65 g of cocoa
  • 3 tablespoons of liquid whipping cream
  • 240 g of sugar

 

We separate the whites from the yolks.

Beat the egg yolks with 150 g of sugar until they double in volume. Then we add the oil and salt powder.

In a bowl, mix the flour with the cocoa powder.

We pour cocoa and flour over the yolks,

Beat the egg whites with 50 g of sugar.

Mix the 2 mixtures.

We put a baking paper in a classic oven tray.

Put the top in the preheated oven for 20-25 minutes at 160 degrees.

Meanwhile we prepare the cream.

The whipping cream should be from the fridge, as should the mixer bowl and tools. That way we are sure that your whipped cream will be perfect. add sugar if the cream is unsweetened, if it is sweet, do not add sugar. Don’t forget the vanilla essence. When the cream is ready, let it cool until the cocoa top is completely cooled.

When the top has been taken out of the oven, put it on a clean kitchen towel that we sprinkle with powdered sugar and roll in the towel. We leave it to cool completely there.

When it’s cold, fill it with whipped cream and leave it aside until we make the glaze.

Beat the butter with the cocoa powder, then add the powdered sugar and the liquid cream.

We decorate our log by spreading the cream over the entire surface. We make a pattern with the help of a fork.
