Eggs in red sauce/Eggs in purgatory (Italian Recipe)

Because. It’s the season of garden tomatoes, sweet, tasty and juicy I said it is the right time to take advantage of them.
So today we make an egg recipe in tomato sauce, a recipe that is extremely easy, is super delicious and I am convinced that it will conquer your loved ones.
The recipe has its origins in Italy, more precisely in the Napoli area.
It is that dish that the plate will remain clean, because everyone will eat everything.

- 200 g tomatoes
- 400 ml tomato sauce (Pasted tomatoes)
- an onion (I used green)
- 2-3 cloves of garlic
- 30 g of parmesan
- 4 eggs
- olive oil (one spoon)
- fresh basil
- I recommend you to serve it with good bread, ciabatta or foccacia. All the onion and put it to heat, clean and cut the garlic. We put it over the onion after it has hardened.
We chop the tomatoes and put them over.
We also add some basil leaves, salt and pepper.
We also put the tomato sauce and let it boil for 10-15 minutes.
After boiling the sauce make a hole in it and add the eggs.
We let them be done according to how we like to serve them (softer or stronger).
Add parmesan, decorate with basil and enjoy your loved ones!
