EGGVOCADO (Avocado and Egg toast)

I love to cook because I love to eat. I really like to cook my own food because I feel that this process is part of the whole ritual of eating. When I go to the restaurant and discover a recipe that I like, then I try to reproduce it at home.

I fell in love with it and then started to include it in my weekly menu, especially since it contains everything that is healthy. Of course, each time you add a personal note to the recipe.

You need:

  • an avocado
  • an egg
  • rye bread
  • salad / tomatoes for decoration
  • salt
  • a teaspoon of olive oil

Prep Time: 6 Minutes

Preparation:

Optional: You can toast the bread.

Cut the avocado in two halves and with a spoon remove the contents and put it in a bowl. Mash until it becomes like a paste, then add a pinch of salt and a tbs of oil. Mix well.

Then spread on a slice or two of bread obtained pasta.

Then we prepare the poached egg. Put the boiled water in a small pot, add 3-4 teaspoons of apple cider vinegar (it works with any type of vinegar, but if it is balsamic vinegar it changes the color of the egg, also the amount of vinegar depends on the amount of water). You wait to boil and add the egg. (Before adding the egg mixture to the water to make a whirl, this will help the egg white to tighten). Let it boil for about 3 minutes (during which time you can check whether it was done or not, depending on how soft / strong you prefer it). Then put the egg on a towel, tap the traces of water and place it on the slice of bread. Arrange the dish according to taste.
