Baked Cheesecake Classic New York Style Recipe

A delicious, fluffy, creamy, sweet, sour, light dessert … what can I say, a madness on the palate.

- 1.2 kg of cream cheese
- 4 eggs at room temperature (220 g eggs, 4 medium eggs)
- 325 g of sugar
- 50 g flour
- 200 g cream
- vanilla essence
- lemon juice (optional)
- 200g digestive biscuits
- 100 g butter
- lemon zest (optional)
- a pinch of salt
For the jam you put on the cheesecake you need:
a fruit jam or you can do it on the spot from:
- 200 g of raspberries
- 2 tablespoons sugar (depending on taste, if you want it to be sour you can put less sugar).
- a tablespoon of lemon juice
I used a 22 cm diameter tray. If you use a larger one there is no problem. (It will come out shorter)
We grind the talk and melt the butter. Mix the biscuit powder with butter and form the top at the base of the tray. We can press with a glass.
We base the cheesecake on the preheated oven for 8 minutes at 180 degrees.
After 8 minutes, let it cool before adding the cream cheese. (must be at room temperature).
We prepare the cream cheese, we mix it with the sugar, the flour and the vanilla essence, the cream, the salt powder and then we incorporate the eggs one by one.
We make sure everything goes well. Beat the pot a little to get the air bubbles out.
We put a pot of water to boil, we will need it to bake.
Pour the cream cheese over the counter.
Grease the edge of the pan with butter so that it does not stick.
We wrap the tray in aluminum.
We put the tray in another larger tray in which we can add boiled water.
Put the cheesecake in the preheated oven for 45 minutes at 175 g and for another 35 minutes at 165 degrees.
After removing it from the oven, let it cool to room temperature and then put it in the fridge for at least 4 hours (preferably leave it overnight).
Raspberry jam is extremely easy to prepare. put the fruit on the fire with the sugar and the lemon juice, let it boil, during which time we stir from time to time. Let cool and enjoy.
To cut the cheesecake more easily, it is good to have the knife blade heated. (You can keep it in a glass of warm water, but wipe it off with water before use).
