Vegetable Soup ( Granny’s Secret Recipe)

Hello dear ones and welcome on Wednesday’s recipe! This week I suggest you to make Vegetable Soup together! I’m a big soup fan and I hope so are you. I feel the need to consume it a few times a week firstly because I love its taste and secondly because it is very healthy. After all, it’s just vegetables, so what could be wrong?

For 4.5 l of soup.

We will need:

  • 3.5 l of water
  • 4 potatoes
  • a quarter of an average celery
  • a parsnip
  • 3 carrots
  • an onion
  • a pepper
  • salt
  • pepper
  • oil
  • 330 ml of tomato juice
  • 200 ml tomato sauce
  • 450 ml of borscht
  • greenery (parsley)
  • optional: vegetable made by mother (canned vegetables)
  • optional: noodles

 

First, we put the water in the pot and boil it. Meanwhile, peel the potatoes, cut them into cubes and put them to boil in the pot.

Heat the oil in the pan.

Chop the onion, put it to harden in the pan, and then put in the blender (or you can chop by hand), one by one, the vegetables. During the mincing, put them in the pan over the onion, mix with 50 ml of water and cover the pan. In general, I start chopping first the vegetables that are hardest to cook, celery, then parsnips, carrots, and finally diced peppers. After we have finished chopping all the vegetables and put them in the pan, let them cook and optional add canned vegetables. Then, put salt and pepper to taste over the vegetables in the pan. When we see that they are cooked, add the tomato sauce and the broth and let them boil.

We check with a fork if the potatoes have boiled. We take a cube out of the pot. If when we press with the fork it is soft, it means that it has been cooked, if it is hard, it must be left to boil.

When the potatoes are cooked we can add the composition from the pan to the pot. Let it boil for another 5 minutes and then add the borscht (the borscht is added to taste, I like the sour soup, but if you prefer it sweeter you can put less borscht). If you don’t have borscht in the house, you can sour it with lemon juice, but I recommend borscht because it gives it a different flavor.

After we put the borscht, let it boil for another 5 minutes, then we can add the noodles that we let boil for 8 minutes.

Then we put a bowl of soup to cool, we taste it to see if it is sour, salty, spicy enough and we add what else is needed, according to taste.
